Chocolate Muffins

Ingredients

225g self-raising flour

2 teaspoons baking powder

pinch of salt

40g sifted cocoa powder

115g light soft brown sugar

225ml milk

115g natural yoghurt

1 egg, beaten

1 tsp vanilla essence

55g melted butter

175g milk chocolate chips

Recipe

1. Preheat oven to 200c/180c fan, and place 12 muffin cases into a muffin tin

2. Sift flour, baking powder, salt and cocoa powder into a large bowl, then stir in the sugar.

3. combine milk, yoghurt, egg and vanilla essence, then stir this into the flour mixture together with the melted butter, mixing well. 

4. Fold in the chocolate chips and divide the mixture evenly between the muffin cases, filling each one about three quarters full. 

5. Bake for 20 minutes or until risen and firm to the touch. Transfer to wire rack to cool.
